A chef's knives are their most important tool. In his carrer (35years) Paul has only had four 'every day' knives. He has recently bought a new knife and is still getting used to it after eight months. The sharpening process is practice that chef. Paul, learnt at hte atrt of his career from a mobile knife sharpener. This cultural practice has changed significantly over the last century - knives can be sent away for sharpening, or practitioners learn to maintain their own.
