In the heart of the Scottish Highlands, Anja Baak's small family-run business The Great Glen Charcuterie specialises in handcrafted charcuterie made using the finest Scottish venison. Based in the village of Roy Bridge, the business is rooted in a deep respect for the landscape, local ingredients, and traditional craftsmanship.
Originally from The Netherlands, Anja moved to Scotland more than 20 years ago after falling in love with the country’s rugged beauty and exceptional natural produce. Her passion for venison began while living on a Highland estate, where she and Jan Jacobs became closely connected to the sustainable management of the local wild deer population. Inspired by the quality and flavour of the meat, she started experimenting with smoking and curing venison at home using a hand-built smoker in the garden.
What began as a passion shared with family and friends soon grew into a dedicated artisan business, producing distinctive smoked and cured venison charcuterie that celebrates the rich flavours and traditions of the Highlands.
