    <dcterms:description><![CDATA[Aaron Sterritt lives and works in Scotland within the Cairngorms National Park. ​Aaron Sterritt Woodwork creates contemporary pieces that are inspired by the natural characteristics of the wood in which he works. It takes creative imagination to visualise a tree transformed into a stunning individual piece of art, sculpture or furniture. That is what Aaron Sterritt does on a daily basis.
Aaron’s creativity and relationship with wood is in his DNA. Raised in a log cabin in the heart of the Scottish Highlands – Aaron was born to work with wood.
Aaron’s understanding of wood and how he stamps his personality on it is totally focused on shaping and crafting wood in a natural way. Splitting the wood along the cells of the grain, keeping the strength of the timber intact, creating beautiful natural shapes.
Aaron’s skill is then to take the split wood and form it into a piece of furniture or sculpture that are one off creations. This is done by the axe; shave horse, drawknife and spoke shave tools.
The end result is a combination of creativity, a deep understanding of wood and the craftsmanship skills to create truly beautiful functional and decorative items.
Aaron runs green woodworking workshops at his workshop  outside Forres, Scotland. Green woodworking is a traditional practice using fresh wood still full of sap allowing the tools to split, slice, shave and cleave through the wood with ease. He uses techniques that have been developed over hundreds of years, that are in harmony with the nature and qualities of the wood itself. No prior wood working experience is necessary, courses are for all abilities.

    <dcterms:description><![CDATA[Afuega’l Pitu cheese is an artisanal product crafted with traditional methods in several regions of Asturias. It is made exclusively from cow’s milk—sourced from local farms and derived from either Frisona or Asturian valley breeds. This rich, fatty cheese is produced primarily through acid coagulation and can be enjoyed either fresh or aged. The name Afuega’l Pitu (which translates to “choke the throat” in the Asturian dialect) has an uncertain origin, and several interpretations have been proposed for this unusual name. One theory suggests that it may refer to the occasional difficulty in swallowing the cheese due to its uniquely compact and firm texture. Afuega’l Pitu is produced on a small scale and crafted artisanally under the Protected Designation of Origin (PDO). Currently, its annual production is approximately 125,000 kg.

Afuega’l Pitu cheese with PDO is produced in four traditional varieties, which are differentiated by the type of mould used—either a truncated cone-shaped mould ("atroncau") or a gauze tied at its ends, giving it a courgette-like shape ("trapu")—as well as by the absence ("blancu") or presence ("roxu") of paprika. This results in the following varieties: atroncau blancu, atroncau roxu, trapu blancu, and trapu roxu. Additionally, there are technological differences, such as the kneading of the curd—a process typical of the trapu variety and of cheeses containing paprika (i.e., trapu blancu, trapu roxu, and atroncau roxu). The cheeses typically weigh between 200 and 600 grams and are enjoyed both fresh and ripened. Afuega’l Pitu cheese is highly esteemed for its sensory attributes. According to product specifications, it has a slightly sour taste, minimal saltiness, and a creamy yet relatively dry texture; the addition of paprika gives it a stronger, spicier flavour. Initially drawn to both the arts and sciences, she studied Jewellery & Silversmithing before dividing her time between marine conservation work around the world and developing her jewellery practice in Edinburgh.

Later settling with her husband in the Cairngorms National Park, Amy established a home, jewellery studio, gallery, and workshop space alongside a luxury garden cabin for visitors. Her practice evolved organically from commissions created for friends and families seeking meaningful, personal pieces to mark marriages, birthdays, and other significant moments.

Amy’s work is rooted in collaboration, drawing on themes of personal history, ecology, and philosophy. She frequently works with inherited or family gold, melting and reforming it into contemporary designs using traditional techniques. Many of her pieces incorporate contour lines and landscapes connected to the stories and places that hold significance for her clients.

Living and working in a rural environment has also shaped Amy’s interest in cultural sustainability and the relationship between creative practice and tourism. Together with her husband, she views their decision to build a livelihood as artists in the Highlands as both a leap of faith and an ongoing opportunity to connect with and learn from creative communities around the world.]]></dcterms:description>

Based in the village of Roy Bridge, the business is rooted in a deep respect for the landscape, local ingredients, and traditional craftsmanship.

Originally from The Netherlands, Anja moved to Scotland more than 20 years ago after falling in love with the country’s rugged beauty and exceptional natural produce. Her passion for venison began while living on a Highland estate, where she and Jan Jacobs became closely connected to the sustainable management of the local wild deer population. Inspired by the quality and flavour of the meat, she started experimenting with smoking and curing venison at home using a hand-built smoker in the garden.

What began as a passion shared with family and friends soon grew into a dedicated artisan business, producing distinctive smoked and cured venison charcuterie that celebrates the rich flavours and traditions of the Highlands.]]></dcterms:description>

    <dcterms:description><![CDATA[Textile artisan Ragnhild Lie discovered that most of the wool from the area was being sent out of the country while people were knitting with foreign-produced yarn. This led her to reclaim the wool and cultural heritage in the craft. With a background in working with wool, Lie decided to establish a workshop centred around sheep, wool and craftsmanship on her small farm. In 2013, she introduced the first 6 wild sheep to the farm. Lofoten Wool was founded in 2014, with sustainability at the core of everything they do. Their commitment to quality, both in design and product, forms the foundation of their work. Lofoten Wool believes in a short production line with local roots that take into account and continue old handicraft traditions. They shear their own sheep and take care of the cultural landscape through traditional grazing techniques. A modern garment with a new design based on a historical knitting tradition is the result.

Traditional practices with wool have developed to yarn production, and a substantial progress in knitting patterns and techniques. They also try to use as much of the sheep as possible: from making soap from the fat, liver pate from the meat, lamb roll, pinnekjøtt (traditional dish), and skin and yarn from the wool. The yarn is spun at Hillesvåg Ullvarefabrikk in Nordhordland before it gets dyed in Lofoten Wool’s workshop using natural colours, some of which come from traditions dating back to Viking times. The garments are hand-knit by local artisans, showcasing a love for craftsmanship and sustainability.

Without sheep and wool, people would never have been able to settle in the north. Wool, the raw material, is regionally distinct because of the unusual climatic conditions of the Lofoten Islands in Norway, north of the Arctic Circle. The wool comes from an old sheep variety “gammelnorsk sau”. The “gammlenorsk sau” sheep variety is extremely hardy and robust, thus tolerating the conditions outdoors all year around.     <dcterms:description><![CDATA[A black clay potter in Molelos (Tondela), António Manuel Matos Marques started in the art at the age of 14, learning from his uncle (who in turn had learned from his grandfather). He has more than four decades of continuous practice, producing mainly utilitarian and decorative pieces on a potter's wheel, with a traditional burnished finish. He continues to fire his pieces in a reducing environment (wood-fired kiln) and values the transmission of know-how — he even taught a colleague when he was 19 years old. In the workshop, the polishing stage is often carried out by local craftswomen (e.g. Lurdes Coimbra). Among his current pieces are jugs (c. 20 minutes/unit), baking trays and tableware, preserving the formal grammar of the Molelos pottery centre.]]></dcterms:description>

    <dcterms:description><![CDATA[Beekeeping has historically been an integral part of rural life in Asturias. According to the census conducted by the Marquis of Ensenada in the mid-18th century, a total of 65,813 beehives were documented in the region. The cultural and economic relevance of apiculture is reflected in practices such as the inclusion of hives and apiaries in dowries provided by parents to their daughters upon marriage, as well as in testamentary bequests—such as that of Licentiate Juan Sierra de Castañedo (from the municipality of Allande), who in 1659 stated: “a good hive shall be given to the priest attending my death, and if there are two, each shall take one.”  The imposition of wax-based tributes by monastic institutions on Asturian peasants further contributed to the entrenchment, expansion, and institutionalization of beekeeping in the region. By 2007, official records indicated the presence of approximately 25,000 beehives within the Principality of Asturias. Of these, 13,232 were registered under the Federation of Beekeepers’ Associations of the Principality of Asturias (FAPI), and were managed by a total of 776 apiarists.  Asturias exhibits an average of approximately 15 hives per beekeeper, with a significant number of practitioners operating at small scale. This pattern reveals a high degree of dispersion of beekeeping activity across the Asturian territory. While the overall volume of honey production may be modest, the ecological benefits in terms of pollination, as well as the high quality of bee-derived products—such as honey, pollen, and propolis—underscore the continued importance of apiculture in the region.  ]]></dcterms:description>
